Chocolate on Chocolate Biscuits
These biscuits are a little sweet and and a little crunchy. When topped with the rich chocolate icing they become the perfect level of sweet. Hard to stop at one, but if you can, they're not too bad for you either, although best to make them small.
Ingredients
- 180 grams Plant Based Butter
- 1/3 cup Castor Sugar
- 1 1/2 cups Plain Flour
- 1 tbsp Cocoa
- 1 cup Cornflakes, lightly crushed
- 1/4 cup Desiccated Coconut
Icing
- 3/4 cup Icing Sugar
- 1 tbsp Cocoa
- 1 tsp Plant Based Butter, melted
- 1 tbsp Water (approx)
- 1/4 cup Desiccated Coconut
Instructions
- Preheat oven to 180c
- Beat butter and sugar in small bowl with electric mixer until light and fluffy. Mix and then knead in sifted flour, cocoa, cornflakes and coconut until combined. Form small balls using about 1 tablespoon of mixture and place on lined baking tray. Press each biscuit down slightly with prongs of fork.
- Bake for 15 minutes. Cool biscuits for five minutes before transferring to cooling rack.
Icing
- Sift sugar and cocoa into bowl. Add melted butter and water. Mix until smooth and slightly runny. Once biscuit are cool spread tops with icingand sprinkle with coconut. Allow ½ hour for icing to set.
