Packed full of seeds and nuts, not only do these bars taste great, they also deliver a bounty of nutrients, fibre and protein. Inspired by the humble ANZAC biscuit, the buttery syrup base creates a simple, comforting flavour that is hard to resist and will keep you coming back for more.
Muesli Bar Moulds
The next best thing about this recipe is how well the bars hold their shape. There are two factors here: the Golden syrup and these fantastic moulds which I bought at Big W for $6. By pressing the muesli bar mixture into these moulds you will get the perfect granola bar shape. Nice even edges and no crumbling. Just like the real thing. Amazon have these moulds which are slightly smaller, so if smaller portion control is a priority, these are perfect.

Sweetness
Depending on your personal taste, feel free to adjust the sugar. Both the sugar and golden syrup in this recipe deliver the sweetness. The golden syrup acts as the binding agent in this recipe so it’s best to leave this unadjusted, but feel free to increase or decrease the sugar content.
Wrapping
If you have time to indulge your inner stylist, you can take these bars to the next level. Wrap them in brown paper, secured with a mini hand written label, making them extra easy to grab and go. If this is a step too far, simple store in an air tight jar for a few days.
Bite Size Pieces
Another option is to cut the bars into quarters, making loads to go around. Fill a jar with bite sizes pieces and share them at work. Perfect for the little pick me up treat alongside a cup of tea or coffee when the 3 pm plateau hits.

Buttery Macadamia and Oat Granola Bar
Ingredients
- 120 grams macadamias (roughly smashed)
- 100 grams oats
- 50 grams sesame seeds
- 50 grams pepitas (roughly chopped)
- 50 grams almonds (roughly chopped)
- 50 grams soy protein crisps
- 1 cup plain flour
- ½ cup sugar
- 120 grams plant-based butter (Nuttelex)
- 60 grams golden syrup
- ¼ teaspoon bicarbonate soda
Instructions
- Preheat oven to 160℃
- Place macadamias in plastic bag and smash with kitchen mallet. Macadamias should be in varying sizes from crumb to larger, but no whole macadamias remaining. Â
- Add smashed macadamias, oats, sesames seeds, pepitas, almonds, soy protein crisps, flour and sugar to large mixing bowl and stir until combined. Set aside.
- Melt butter and golden syrup in saucepan over medium heat. Once boiling, remove from heat, add bicarbonate soda and mix though until mixture froths. Add to dry mixture and stir until combined.
- Press mixture into granola bar moulds, about 1 ½ cm thickness, place on tray (for added support to silicon mould) and into preheated oven for 15 minutes.
- Remove from oven and allow to cool completely. Remove from moulds and store in airtight container.
